iPodMods disassembled Zune and gives us a howto tutorial. This is definitely a dont-do-this-at-home. They say you can even now take the Zune's 30 GB hard disk out and replace it with a 40 GB one. 60GB or 80GB disks are also possible but in the cost of leaving your Zune's back panel open Frown EDIT: with a bit more effort the 60 & 80 GB disks fit in Zune...

Toshiba 40GB Drive for Zune

IPodMods have found that it is possible to use the new ZIF drives from Toshiba in Zune. The 40 GB model can replace the existing 30GB without problems.

There is a problem with the 60GB and 80GB models. Zune is not designed for these models, so they want leave the back panel fit back. But maybe with a new Zune panel the switch to these models can be also possible.
